Garlic Butter Beef and Spinach Tortellini

A simple and delicious recipe for Garlic Butter Beef and Spinach Tortellini.

Ingredients
  

  • 1 package Tortellini Fresh or frozen
  • 1 pound Beef Ground beef, beef cubes, or beef bacon
  • 10 ounces Spinach Fresh or frozen (thaw and squeeze excess water if frozen)
  • few tablespoons Butter
  • 2-3 Cloves garlic Minced
  • Seasonings Salt, pepper, Italian seasoning
  • Water or broth For cooking and sauce
  • Vinegar Optional, for tenderizing beef
  • Parmesan cheese Optional, for garnish
  • Parsley Optional, for garnish
  • Red pepper flakes Optional, for garnish

Instructions
 

  • Pan-brown ground beef or beef cubes in butter over medium-high heat. Cook until browned.
  • Pre-cook beef cubes if desired (pan or slow cooker).
  • Crumble beef bacon into pan if using.
  • Boil water in a pot. Add tortellini and cook according to package directions (3-5 minutes for fresh, 5-7 minutes for frozen).
  • Alternatively, microwave tortellini in water (1-2 minutes for fresh, 2-3 minutes for frozen).
  • Drain tortellini.
  • Melt butter in a pan over medium heat. Add minced garlic and cook until fragrant (about 1 minute).
  • Simmer with a little water or broth for a smoother sauce.
  • Add cooked beef to the garlic butter sauce. Stir to coat.
  • Add cooked tortellini and stir.
  • Add spinach (squeeze out excess water if frozen) and stir until heated through.
  • Season with salt, pepper, Italian seasoning, and/or vinegar to taste.
  • Serve immediately.
  • Garnish with parmesan cheese, parsley, and/or red pepper flakes, if desired.

Notes

Adjust ingredient amounts based on how many people you're feeding. One package of tortellini usually serves 2-3 people. About one pound of beef is good for four servings.
